Pablo José Ferrigno Figueroa is a third generation coffee grower. As a young adult, he worked in his family’s farms located in Guatemala’s warm coastal areas. After attending a conference regarding the role of quality in the future of coffee, he focused his efforts on producing specialty coffee. In 1991, he established his farm, Santa Sofia, in Alta Verapaz. It was an uncommon place for coffee production because of its wet and cool climate, and friends, family, and other producers were skeptical of his plans. However, Santa Sofia has grown to produce 500 bags of green coffee per year, offering several varietals and producing some of the best coffees in the region.

For this natural processed coffee, mature cherries are picked and slow-dried on a patio over a period of three weeks. This process is highly labor intensive; the cherries must be raked, turned and covered during rainfall to prevent spoilage; and in Alta Verapaz, rainfall is nearly constant. Although labor intensive, this process allows for the coffee to develop intense fruit flavors. We find this coffee exceptionally fruity with notes of green apple candy, white pear, and agave.
