Pablo José Ferrigno Figueroa is a third generation coffee grower. As a young adult, he worked on his family’s farms in Guatemala’s warm coastal areas. After attending a conference on quality and the future of coffee, he focused his efforts on producing specialty coffee. In 1991, he established his farm, Santa Sofia, in Alta Verapaz, a region with a wet and cool climate. It was an uncommon place for coffee production because of its cool climate, and friends, family, and other producers were skeptical of his plans. However, Santa Sofia has grown to produce 500 bags of green coffee per year, offering several varietals and producing some of the best coffees in the region.

Pablo ferments this coffee for up to 48 hours before washing and soaking in clean water for 24 hours. Typically, a “washed processed” coffee is dried on patios, but because the region of Alta Verapaz receives almost constant rain, some extra steps are necessary to complete the drying process. At Santa Sofia, the coffee is rotated in strictly controlled mechanical dryers and is rested between dryings to stabilize humidity. Once the coffee reaches an ideal humidity, it rests for at least three weeks before getting sent to the dry mill.

This coffee makes a balanced cup with notes of citrus, fruit leather, and panetone.
